I inadvertently invented breakfast sushi at the weekend.  Simply cut a ‘thin’ sausage into 4. Scoop out most of the meat. Fill with scrambled egg.  If you are being posh you could crumble crispy bacon on top.  Endless possible variations with black/white pudding and mushrooms too.  Coming soon to a swanky finger food party near you soon - or not.
